6 eggs ½ cup milk 1 cup full-fat cream ⅓ cup scallions ⅔ cup shredded gruyere 1 teaspoon oregano 1 tablespoon mustard 500 g 1 pound fresh italian sausages, cut into pieces 1 bell pepper sliced 1 medium onion sliced 3 cups white bread cut into cubes
Preheat the oven to 180C/350F.
Whisk eggs with salt, pepper, milk, cream, scallions, mustard and oregano.

In a medium pan saute bell pepper and onion for 5 minutes. Add in sausages and cook for 10 minutes or until slightly brown.

Transfer sausages and vegetables into a baking pan, mix in bread cubes. Pour eggs over, making sure to submerge each slice of bread. Top with cheese.

Bake for 1 hour, let cool down slightly before serving.
