Preheat the oven to 180C/350F.
In a medium pan heat some olive oil and saute onions with peppers for around 7 minutes, until translucent. Add ground beef and cook, breaking meat with a spoon, for around 10 minutes. Drain if excess liquid is left.
1 red bell pepper, 1 medium white onion, 500 g 1 pound ground beef
Season meat with salt, pepper and garlic, mix in tomato paste and cook for 30 seconds.

Combine meat with corn, jalapenos, ketchup, mustard, ½ cup of cheese and pickles. Pour chicken stock and cook for 5-7 minutes.
1 ½ cups white cheddar cheese, 2 tablespoon pickled jalapenos, ¼ cup ketchup, 1 cup canned corn, ½ cup pickles, ¼ cup american mustard, 1 cup chicken stock
Transfer the casserole base into the baking dish and sprinkle 1 cup of cheese on top. Add mashed potatoes and spread the layer out with a spoon to cover the beef sauce.
1 ½ cups white cheddar cheese, 2 cups mashed potatoes
Bake for 25 minutes, sprinkle with sliced scallions.
