Ingredients
  

  • 2 cups mashed potatoes
  • 500 g 1 pound ground beef
  • 1 ½ cups white cheddar cheese shredded
  • 1 red bell pepper chopped
  • 1 medium white onion chopped
  • 3 garlic cloves minced
  • 2 tablespoon pickled jalapenos chopped
  • ¼ cup tomato paste
  • ¼ cup ketchup
  • 1 cup chicken stock
  • 1 cup canned corn
  • ½ cup pickles chopped
  • ¼ cup american mustard
  • sliced scallions for serving

Instructions
 

  • Preheat the oven to 180C/350F.
  • In a medium pan heat some olive oil and saute onions with peppers for around 7 minutes, until translucent. Add ground beef and cook, breaking meat with a spoon, for around 10 minutes. Drain if excess liquid is left.

  • Season meat with salt, pepper and garlic, mix in tomato paste and cook for 30 seconds.

  • Combine meat with corn, jalapenos, ketchup, mustard, ½ cup of cheese and pickles. Pour chicken stock and cook for 5-7 minutes.

  • Transfer the casserole base into the baking dish and sprinkle 1 cup of cheese on top. Add mashed potatoes and spread the layer out with a spoon to cover the beef sauce.
