4 medium white onions sliced 4 medium shallots sliced 3 thyme sprigs 150 ml 5 fl.oz dry white wine 350 g 12 oz shell pasta 150 ml 5 fl.oz cream 2 tablespoon soy sauce 2 tablespoon sugar 150 g 5 oz gruyere cheese, shredded 3 tablespoon butter
Preheat the oven to 200C/400F.
Melt butter in a heavy cast iron skillet. Cook white onions and shallots for 15 minutes, adding a pinch of salt to it.

Mix onions with sugar and soy sauce, cook for 10 minutes more. Pour in white wine, add thyme and continue cooking for 15 minutes more.

Meanwhile, cook pasta al-dente, saving about ½ cup pasta water.
350 g 12 oz shell pasta
Mix pasta with onions, pour in pasta water and full-fat cream, bring to a boil and transfer into a baking pan.
150 ml 5 fl.oz cream
Top pasta with cheese. Bake for 15 minutes.
