Preheat the oven to 200C/400F.
In a large bowl whisk flour with salt and sugar, add cold butter and work it into the flour until small crumbs form.

Add cold water into the crumbled pastry and knead just until it starts coming together. Form the pastry into a disk, wrap in plastic and let sit in the fridge for 30 minutes.

Melt butter in a preheated skillet. Add apples, sugar, salt, lemon juice, nutmeg, cornstarch and cinnamon, mix well. Cook apple filling for 5-7 minutes.

Roll out the pastry and cut into pieces of any shape you like. Cover apple filling with the pastry and brush with egg wash. Finally sprinkle cinnamon sugar on top of the pie and transfer into the oven preheated to 200C/400F for around 25-30 minutes.
