PEAR AND SWEET POTATO CASSEROLE

Topped with crumbled blue cheese and crispy pecans, this side dish is the perfect holiday comfort food!

INGREDIENTS

Large Radish

Sweet potatoes, fresh rosemary, fresh thyme, pears, blue cheese, pecans, olive oil, eggs, butter, salt, and black pepper. 

Peel and slice the sweet potatoes and then cover with water in a large stockpot.  Add the fresh herbs, and bring to a boil. Cook until the potatoes are tender.

Artichoke

Drain the potatoes and discard the herbs.  Then mix in the olive oil, butter, salt, pepper, and eggs.  Blend until smooth.

Pour the mixture into a prepared baking dish and smooth the top.  Then place sliced pears on top and bake covered for 30 minutes. Uncover and bake another 20 minutes.

Once baked, top with crumbled blue cheese and chopped pecans.  Serve hot with a drizzle of honey on top!
