LAYERED VEGETABLE CASSEROLE

Beets, zucchini, and carrots are layered with a creamy cheese sauce and baked until tender and delicious.

INGREDIENTS

Zucchini, beets, carrots, thyme, eggs, cream cheese, heavy cream, parmesan, salt, black pepper, and olive oil.

Peel and clean your vegetables then slice them with a mandolin into thin rounds.  Divide each into a separate bowl.

In a large bowl, whisk together the cream cheese, egg, heavy cream, parmesan, salt, and black pepper.  Then, divide it between the three bowls of vegetables..

Layer the vegetables beets, carrots, and zucchini pouring extra sauce between each layer.  Cover with foil and bake as directed.

Bake and slice to serve.  This is the perfect side dish to share and has delicious flavor with fresh vegetables in every single bite.  Sprinkle with parmesan before serving.
