A simple mixture of zucchini, tomatoes, bell peppers, and mushrooms with delicious cheesy sauce and crispy croutons!
Red onion, bell pepper, mushrooms, zucchini, tomato,olive oil, salt, pepper, oregano, ricotta, basil, parmesan, mozzarella, and croutons
In a large skillet cook the bell pepper and onion until soft, then add in the mushrooms and continue cooking for 8 to 10 minutes.
When the mushrooms are soft, add in the zucchini and cook until tender then add the tomatoes and stir to combine.
In a bowl, mix together the ricotta, parmesan, and fresh herbs. Pour 1/2 of the vegetables into a baking dish, then top with the cheese mixture.
Top that with the remaining vegetables, then a layer of shredded cheese. Put bread crumbs or croutons on top and bake as directed.
Serve with additional fresh sliced basil if desired. This is a great side for any entree, but is hardy enough to be a meal by itself.
