GNOCCHI CASSEROLE WITH HAM & MUSHROOMS

A delicious and easy meal with pillowy gnocchi, mushrooms, onions, and ham in a rich cream sauce!

INGREDIENTS

Large Radish

Onion, butter, oyster mushrooms, ham, broth, gnocchi, heavy cream, cream cheese, white cheddar, and fresh basil leaves. 

Melt butter in a large skillet and saute the onions until translucent then add in the mushrooms and cook until browning.

Artichoke

To the vegetables, add the ham and cook another 2 to 3 minutes.  Then, add in the cooked gnocchi and stir to combine.

Stir in the broth, cream, cream cheese, and some of the cheese.  Simmer until thickened then pour into the prepared baking dish and broil until browned and cheese melts.

Serve with additional fresh sliced basil if desired.  This is a great side for any entree, but is hardy enough to be a meal by itself.
