CHICKEN CORDON BLEU CASSEROLE

Chicken, ham, swiss, and a delicious creamy sauce combine for a rich and satisfying dish best served with pasta.

INGREDIENTS

Large Radish

To make this casserole:  Shredded chicken, ham, cream, flour, butter, mustard, Parmesan, and Swiss cheeses. 

Melt the butter in a saucepan, then whisk in the flour to make a roux.  To this, add the cream and simmer on low until thickened.

Artichoke

Add the parmesan and part of the Swiss cheese and stir to thicken. Season to taste.  Then, pour this sauce over the shredded chicken and diced ham.

Radish

Pour into a prepared baking dish, and then cover with the remaining cheese before baking until golden brown and heated through.

Carrot

Serve this creamy casserole over rice, potatoes, or pasta for a full meal.  If following a lower carbohydrate meal, this can be served with cauliflower rice.
