Olive oil, bell pepper, onion, chorizo, cornmeal, baking powder, whole kernel corn, egg, buttermilk, oil, sugar, salt, and shredded cheese
In a large skillet, cook the onions and bell pepper until tender, then add the chorizo and cook 8 to 10 minutes until cooked through.
In a large bowl, whisk the cornbread batter then stir in the corn, part of the cheese, and the cooked chorizo and vegetables.
Once everything is mixed, pour into a prepared baking dish and top with the remaining cheese. Bake as directed until cooked through and golden brown.
