Olive oil, ground chicken, red onion, zucchini, red bell pepper, taco seasoning, chili beans, salsa, Bisquick mix, buttermilk, and egg
In a large skillet, add the olive oil, red onion, zucchini, and bell pepper. Cook until tender, then add in the ground chicken and cook for 8 to 10 minutes.
Add the salsa and beans and stir to combine then set aside. In a large bowl, mix together the Bisquick, egg, and buttermilk.
Pour the Bisquick mixture into a baking dish and top with some cheese. Then spread the meat mixture over the top and cover with remaining cheese to bake.
