To make this simple breakfast you will need bacon, eggs, mozzarella cheese, bell peppers (red & green), garlic, sun-dried tomatoes, onions, and seasonings as desired.
In a large skillet, saute the onions and bell peppers for 4 to 5 minutes until they haev become soft and are starting to brown.
Pour the bell peppers and onions into a prepared baking dish and set it aside. Then cook the bacon until it is crisp. Remove and drain on paper towels.
Spread the bell peppers into the pan if you haven't already, then top with the cooked bacon. Then, pour over the eggs you have whisked well.
Add the sun-dried tomatoes across the top. Then sprinkle with the shredded cheese before baking until set in the middle.
