Start by slicing the pumpkin very thin using a mandolin slicer. Then, begin the cream sauce adding fresh herbs, onion, garlic, and cream to a pan and simmering.
Now you will strain the cream and discard the aromatics. Then stir in shredded cheddar until all melted and thickened.
Now it is time to assemble the gratin. Start with a layer of pumpkin then half the sauce, repeat and then cover with aluminum foil and bake.
After 30 minutes in the oven, remove and top with the shredded mozzarella cheese. Continue cooking until it is browned nicely and the pumpkin is fork tender.
