Boneless chicken thighs, cream cheese, shredded mozzarella, garlic, riced cauliflower, onion powder, paprika, and sour cream.
Season the chicken thighs and drizzle with olive oil then bake until they are cooked through. Let cool before shredding.
Using a grater, rice the cauliflower into small pieces. Cover with plastic wrap, then microwave for 6 minutes. Drain excess liquid.
Combine all ingredients in a large bowl and stir until mixed well. Pour into the baking dish and cover with cheese then bake as directed.
