ZUCCHINI & TOMATO CASSEROLE

INGREDIENTS

Large Radish

Zucchini, tomato, dried oregano, olive oil, salt, black pepper, Parmesan, all-purpose flour, and butter

Prepare your baking dish with olive oil, then slice your tomatoes and zucchini into 1/4" rounds.  Lightly season with salt and black pepper.

Artichoke

Layer these in a baking dish alternating each vegetable until the dish is filled.  Then, drizzle with oil and seasonings.

Radish

In a bowl, combine the flour, butter, and parmesan until it makes small crumbs.  Then, sprinkle over the casserole before baking.

Carrot

Serve this delicious side with any of your favorite proteins.  While it is vegetables, it is not strictly vegetarian when using Parmesan.
