To make this recipe you need: Manicotti pasta, onions, mushrooms, spinach, ricotta, mozzarella, garlic, salt, pepper, basil, and tomato sauce
In a large skillet, cook the onions in olive oil until tender, then add in the mushrooms and cook for several minutes until softened and browned.
Then, add the spinach to the skillet and let it cook, stirring regularly, for 2 to 3 minutes, or until it is all wilted. Season with basil, salt, and pepper.
Combine this vegetable mixture with the ricotta and then pipe it into the raw pasta shells. This is easiest with a piping bag.
Pour part of the sauce into the pan, then top with the stuffed pasta. Top with additional sauce, then mozzarella and bake as directed.
