CHICKEN THIGHS WITH MUSHROOMS & POTATOES

The perfect weeknight meal that is a one-dish recipe.  Tender chicken, potatoes, and earthy mushrooms combine to preferction. 

INGREDIENTS NEEDED: 

Large Radish

You will use chicken thighs, butter, button mushrooms, shallots or onion, garlic, chicken stock, dried or fresh thyme, potatoes, and heavy cream plus salt & pepper to taste.

Season the chicken as desired with salt, pepper, and other spices.  Then place into a hot skillet with oil skin side down.  Cook for 3 to 4 minutes per side until browned.

Artichoke

Remove the chicken and set it aside, it will finish cooking later.  Then place the sliced potatoes into the same pan and cook for 4 to 5 minutes until tender and browned.

Radish

Remove the potatoes from the pan, then saute the shallots.  Add in the mushrooms and cook until tender and browned - around 5-6 minutes.

Persimmon

Then, sprinkle the flour into the pan and stir the mushrooms to coat them well.  Stir in the broth making sure no lumps of flour remain.

Stir in the heavy cream and then add the chicken thighs back to the pan along with the mushrooms and potatoes.  Cook on medium heat another 5 to 6 minutes until the chicken is cooked through.

Cook until sauce is thickened then serve immediately with some fresh chopped parsley or thyme. Perfect with a side of hot rolls or side salad.
