Use leftover chicken to throw together a simple meal loaded with flavor with this layered chicken tortilla casserole.
Olive oil, white onion, garlic, tomato sauce, chicken stock, Italian seasoning, cream cheese, chicken, cheddar, and flour tortillas.
In a large skillet, cook the onions until tender then add in the chicken, garlic, and seasonings. Cook until heated through.
To the meat, add the tomato sauce and chicken broth and simmer until thickened. Then, add in the cream cheese and stir to combine.
Layer in a baking dish with tortillas, then chicken, then cheese, until all has been used. Bake as directed.
