HASHBROWN & SPINACH BREAKFAST CASSEROLE

This easy breakfast casserole has layers of flavor with hashbrowns, eggs, spinach, and seasonings topped with melted cheese!

INGREDIENTS

Large Radish

Butter, hashbowns, spinach, onions, salt, black pepper, eggs, parmesan cheese, and mozzarella cheese

Pat dry the hash browns, then cook them for 3 to 4 minutes, without stirring.  Then flip and cook another 3 to 4 minutes.

In a clean skillet, cook the onions until tender, then wilt the spinach and stir together.  Season with salt and pepper if desired.

Whisk the eggs, milk, and seasoning together in a bowl.  Then, spread the cooked hashbrowns over the bottom of the prepared baking dish.

Top this with the spinach and onion mixture and spread it evenly.  Then pour the whisked eggs over the top.  Add additional salt and pepper if desired.

Sprinkle the top with Parmesan and mozzarella.  Bake uncovered as directed or until the eggs are set in the center.  Let stand 5 minutes before slicing to serve.

Serve with hot sauce or salsa on top.  If you prefer, a bit of fresh cracked pepper and additional grated Parmesan cheese is a great garnish!
